Lola Berry visits her mate Kemi Baruwa-Nekvapil. Kemi is a raw food guru and has an incredible outdoor garden to match. We sample Kemi’s Capsicum and Cherry Tomato Salsa and Blackberry and Coconut Mousse – all RAW! If you haven’t try raw yet, you must try these recipes – a guaranteed winner!


Capsicum and Cherry Tomato Salsa:

1 Cup Red or Yellow Capsicum, finely chopped 1⁄4 Cup Red Onion, finely chopped
1 Cup Tomatoes, finely chopped
1⁄2 Cup Parsley, finely chopped
1 Garlic Clove, crushed
1 Tablespoon Lime Juice
1 Tablespoon Olive Oil
Pinch of Nutmeg
Pinch of Salt
Pinch of Black Pepper
Place all ingredients in a bowl and let sit for 1 hour if possible for flavours to combine.


Blackberry & Coconut Mousse (great for dessert or breakfast!):

1 Young Thai coconut 1 cup Blackberries Splash agave syrup Splash of vanilla extract

Open the coconut and drain the juice and put to one side.

Scrap out all of the coconut flesh and place in a blender with the other ingredients.
Blend until smooth, you may want to add a little of the coconut water if it is not blending well. If not slurp the water it up!

Divide the mousse into 2 dishes and serve straight away or chill in the fridge for at least 1 hour.

Will last 3-4 days in the fridge.
