Green Tea Soba Noodles + Tempeh

Ingredients:

1 packet of green tea soba noodles
sesame seeds
200 grams tempeh
nori (seaweed)

Agave Dressing:

juice of 1 small lemon
3 tablespoon tamari (wheat free soy sauce)
1 tablespoon agave
splash of apple cider vinegar

Method:

This recipe really relies on bringing three main elements together: noodles, tempeh and dressing. Boil noodles for approximately 4 – 5 minutes or as instructed on the pack. You want your noodles to be tender. Drain and serve. Combine dressing ingredients and shake in a reusable jar.

To cook the tempeh, dice into 1cm portions and place onto a hot non­stick
pan. Flip and cook the other side so both sides are golden. Toast sesame seeds on a frypan on medium heat to avoid burning. Drizzle agave dressing through noodles and finish with toasted sesame seeds and shredded nori.
