Raw Zucchini Spaghetti with Basil Pesto
The most common reactive foods we eat are wheat, diary, refined sugars and processed junk. So how about favourites like a pasta dish! Well let me introduce you to my raw zucchini spaghetti with basil pesto.
This batch serves two! You need:
3 zucchinis, washed
1 bunch of fresh basil
1 handful washed baby spinach
1⁄2 cup pine nuts, just give them a little toasting in the oven for 2 mins but keep an eye on them
2 garlic cloves
3 tablespoons extra-virgin olive oil
Slice your zucchinis using a Mandolin slicer or veggie spiral cutter and place in a large bowl. Combine other ingredients in a blender or food processor (you may need to add a little more olive oil to get the desired viscosity). Pour the pesto mixture over the zucchini pasta, toss through and garnish with a few basil leaves.
Surprisingly simple and so delicious!
